Pinot Noir and Red Onion Jam

Ingredients

  • 1 1/2 pounds red onions, thinly sliced

  • 2 cups CedarCreek Pinot Noir

  • 2 tbsp honey

  • 1/4 cup currants

  • 1/4 cup dried cherries, roughly chopped

  • 1 tbsp chopped fresh thyme

  • 2 tbsp red wine vinegar

  • Sea salt and fresh ground pepper to taste

Method

  1. Combine onions, wine, honey, currants, cherries and thyme in a large skillet. Bring to a boil, reduce heat to medium-low and simmer uncovered until wine is almost absorbed, stirring occasionally, about 55 minutes.

  2. Mix in red wine vinegar.

  3. Simmer 10 minutes to blend flavours, adding water by tablespoons if mixture is dry.

  4. Season to taste with salt and pepper.

  5. Serve warm with Angus prime rib.

    This jam may be made a day or two ahead. Re-warm over medium heat before serving.

This dish is excellent paired with CedarCreek Pinot Noir.
